Hazelnut-Cream-Stuffed Snickerdoodle Sandwich Cookies Recipe - Every Day with Rachael Ray

I couldnt pass up this fantastic snickerdoodle recipe! They are ty's favorite! I am not a huge fan of hazelnuts so I left the hazelnut cream out of the center and just made the cookies :) They are very very yummy!

Ingredients:

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick (4 ounces) plus 2 tablespoons unsalted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 3/4 cup blanched and peeled hazelnuts, toasted
  • 1/4 cup confectioners’ sugar, sifted

Directions:

  1. Preheat the oven to 375° and line a cookie sheet with parchment. In a small bowl, whisk together the flour, baking powder, 1/4 teaspoon cinnamon, the baking soda and salt. Using a mixer, cream 1 stick butter, the brown sugar and 1/4 cup granulated sugar until fluffy, about 2 minutes. Beat in the egg and vanilla. Mix in the flour mixture at low speed.

  2. In a small bowl, mix together the remaining 2 tablespoons granulated sugar and 1/2 teaspoon cinnamon. Using a 1 1/2-inch scoop, form 12 mounds. Dip the rounded side of each mound into the sugar mixture to coat, then place sugar side up and 2 inches apart on the prepared cookie sheet. Bake the cookies until golden at the edges, 12 to 15 minutes. Let cool for about 2 minutes, then, using a spatula, transfer to a rack to cool completely.

  3. Meanwhile, using a food processor, finely grind the hazelnuts. Add the confectioners’ sugar and the remaining 2 tablespoons butter; process until smooth. Spread 6 cookies with about 2 teaspoons hazelnut cream each and sandwich with the remaining 6 cookies.

Ryan & Tina Harnsberger


We were sooo happy to be invited to a great friend - Ryan Harnsberger's wedding. Ty has known Ryan for a long time and I just consider all of ty's friends... my friends :) We didn't know his fiance Tina Clause very well but she was sooooo beautiful and such a doll! We can easily see why they were ment for each other! The wedding was at the Santa Barbara Zoo, a fantastic wedding site! I have always loved the zoo but this was soooo romantic, open and relaxing for an outdoor wedding. We enjoyed a wonderful meal, dancing and best of all... a dessert station :) Of course I didnt get a picture of that but fully enjoyed it as I bet you can imagine! This was the first wedding we were able to ENJOY after our own... hearing the vows they took reminded me of the vows we took just 1 year ago. Ty and I held hands and I teared up through the whole thing... Overall the night was magical and Ryan and Tina have a wonderful life ahead of them.... too bad they have to start it off in Tahiti for 10 days :)

Our New Residence


We were recently lucky enough to find a new house to rent! It is in a wonderful neighborhood with wonderful neighbors and quiet streets. Kayda loves the dogs that bark all the time and we love the fact that we also have a new roommate Eddie. He is a long time friend and a great human being. Our new home has 4 bed rooms and 2 bathrooms with a front and back yard great for hangin out and having BBQ's! Hope everyone gets to see it soon!

Golfing with the Boys



The other day I was invited to play golf with the "boys". These boys included Ty, Eddie and Seth. These golfers are pretty serious and painfully trying to avoid this excursion... When we got there it actually turned out to be pretty comical... with these "boys" how could it not be? I even hit a par on my first golf swing ever :)

Dinner with Granny and Dave


Yes we are sooo lucky to have such wonderful family so close by and who takes such good, great care of us! Our recent trip to Granny and Dave's was a great treat. We feasted on BBQ'd chicken, wild rice and (knowing granny, home grown) green beans! And for dessert, Granny made her exceptional.... fantastic..... unbelievable... home made of course... Peach Pie! delish! Aside from the wonderful meal, we were also privileged enough to play a game of Bocce ball on their home court! I think they play a lot in their spare time... gave them the upper hand in the game. It was a great time and we always enjoy the company they share and the laughs throughout the night! Our puppies looooove to play together too :)
