November and December

First of all, it is December and I haven't updated anything since Halloween! yikes! Secondly, Copper is already 6 months! Where the heck does the time go? I've decided to include a bunch of photos from November because nothing really exciting happened besides Thanksgiving...
Copper is growing like a weed.... my back is seriously hurting from carrying him around in his carseat, might be time to switch to the big boy car seat finally :) He is eating like crazy... sweet potatoes, apples, carrots, pumpkin, peas, edamame, tofu, whatever he can get his hands on and whatever I have time to whip up. I love making his food at home but it is HARD work. I've yet to try some purple yams from Farmer's Market, that will throw him for a loop :) He is grabbing at everything I eat. I gave him a piece of pork to suck on and of course he loved that too...

No teeth yet but I think they are right around the corner... I swear he started to crawl today. He can do a complete 360 with his arms and inchworm around the living room but as far as actual crawling, he might take a while :) Bath time is still his favorite time of day - besides eating. He is a crazy baby after the bath and we LOVE this play time. We spread out a towel on our bed and he goes NUTS! laughing, screaming, wiggling and just plain fun!

Sleeping has been quite the challenge lately. Pretty unpredictable. One night he will sleep ALL night 7pm-7am, then the next he will be up every hour or so. I think he is just having growing pains or fighting one of the many colds he has picked up :( Other than that, he is still the happiest baby I know, and I just LOVE him to pieces!

Reindeer Noses


I saw this cute idea and had to try it! Dont they look like reindeer noses? I remember my dad would put a red light bulb high in a tree and light it Christmas eve. He would tell me that it was Rudolph's nose and Santa was waiting for me to go to bed so he could put the gifts under the tree :) The red M&m's reminded me of that memory.... can't wait to fool Copper :)

Reindeer Noses:
1 bag of pretzels
1 bag of Rolo's or chocolate kisses
1 bag of m&m's

Heat oven to 250-300
place pretzels on cookie sheet and rolos or m&m's on top of the pretzels and stick them in the oven. Let them soften for about 3-5 minutes just so the chocolate softens but doesn't completely melt. Take them out and gently press an m&m onto the chocolate. Let them set and then eat away!

Halloween 2011

Copper's first Halloween will be a "first" to remember.
We had to stop by the fire station to show dad Copper's costume. He is a Frog :)

We all headed over to the Auntie neighborhood to visit Aunt Becky and Aunt Lindsay (Jeannie's sisters) for their Halloween fun! Becky and her husband Lou put on an amazing spooky halloween every year. Copper obviously wasn't scared... I have a feeling he will be trouble when he grows up...

4 Month Check up!

I will say this over and over but... I cant believe Copper is already 4 months old!!! We had his check up the other day and, not like we were surprised... he is a chunker!

He is 16.6 pounds and 26.5 in tall! That puts him in the 97th percentile! Our doc said if he keeps growing at this rate, he will easily be 6'3" at least :) oh dear....

Copper is exceptionally good at rolling over (tummy to back and back to tummy). Seems like he might be teething a little but nothing has popped through yet. He LOVES his rice cereal at night, managing to get it all over himself and everything around him.
He is the happiest baby :) Very social and loves to smile at strangers! We love our little... i mean BIG growing boy!

First's for Copper

We decided it was time for Copper's first rice cereal! He is such a big boy so why not?

New York Cheescake Cookies

I saw this recipe on the Food Network of course... Copper loves to watch the food network :) They were eaten so fast that I couldn't take a picture of them. They were pretty good if I do say so myself!

New York Cheesecake Cookies

Ingredients
  • 1 1/4 cups finely crushed graham crackers (1 sleeve)
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1 stick (8 tablespoons) unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1 egg, separated
  • 3 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 teaspoon vanilla extract

Directions

Preheat the oven to 350 degrees F.

In a large bowl, stir together the graham cracker crumbs, flour and baking powder. In a medium bowl, beat together the butter with the brown sugar using an electric hand mixer. Add the egg white and beat until well combined. Add to the graham cracker crumbs and blend until just combined.

In a separate medium bowl, beat together the softened cream cheese with the granulated sugar, egg yolk, lemon zest and vanilla until well combined. Set aside.

Using a small ice cream scoop, scoop out the cookie dough and place on a nonstick or parchment lined baking sheet. (If you do not have an ice scoop, then measure out the dough into scoops of about 2 tablespoons.) Flatten slightly, pressing your thumb in the center of the ball to create a small bowl shape. Repeat with the remaining dough. Spoon the cream cheese into the indents in the cookies.

Bake until the filling is barely set and the cookies are lightly golden, 12 minutes. Allow to cool 5 minutes on the baking sheets before removing them and cooling completely on a wire rack.

Yes, little Copper is laughing up a storm! I know it must be a "first parent" moment, but I can't get enough of his little laugh! I felt like we were doing everything to make him chuckle... jumping up and down... making funny faces, talking in that high pitched baby talk voice... and it never seemed funny. But now... EVERYTHING is funny!! Love that little man.

Out for an afternoon walk as a family, we decided to stop at the park by our house. Copper is a little young to be playing on any of the "fun" stuff but we gave it a try anyway! I think he liked it... we will have to be patient though...
